With my surgery coming up in just 3 weeks, I’m prepping like a mad woman!
As I won’t be able to cook for a few weeks after the surgery, I want to get lots of freezer meals made now that I can just throw in the microwave and oven.
I’m double batching everything I’m making as they’re all meals we enjoy and won’t get tired of.
Today’s freezer meal prep includes:
- Freezer Oatmeal Cups
- Butter chicken (from Cafe Delites) with rice & veggies
- Curried Butternut Squash Soup (Minimalist Baker)

Freezer Oatmeal Cups
These are one of my favourite make-ahead breakfasts. They’re healthy, quick, and you can use whatever ingredients you like in them!
Oatmeal
- 2 cups rolled oats
- 4 cups milk, non-dairy milk, or water (or combination)
- 1/4 cup raw sugar, brown sugar, or maple syrup
- pinch of cinnamon
- pinch of salt
Mix together and bring to boil in saucepan. Reduce heat and simmer until desired consistency is reached.
Add any combination of ingredients including:
- ground flax seeds
- chia seeds
- hemp seeds
- protein powder
- nuts
- seeds
- berries or other fruit
- maple syrup / brown sugar
Line muffin trays with silicon baking cups. Divide oatmeal mixture evenly between.
Freeze 6 hours. Remove from freezer, pop out of silicon baking cups, wrap with plastic wrap, place in container or ziploc bag, label and place in freezer.
When ready to eat, remove plastic wrap and place in bowl. Microwave 1.5 – 2 minutes. Top with cream, milk or non-dairy creamer. Enjoy!
